At George's, we like to ring in every weekend with our Friday night special: Kleftico. This slow-roasted lamb dish is one of our signature items, and it's no secret that this show-stopping entree is worth the weeklong wait.
Centuries ago, during the Turkish occupation of Greece, the Greek klephts cooked lambs and goats in sealed, underground pits to hide from their enemies. What resulted was the deliciously tender Greek staple of Kleftico.
We honor the time-old tradition by roasting lamb shoulder for 6-8 hours, seasoning to perfection, and serving it up with a refreshing Greek salad and hearty roasted potatoes.
